Colour Festival

Every hour the DJ did a count down to a big toss where everybody threw their coloured powder into the sky.
This Saturday was the Colour Festival I posted about last month. It was a massive celebration of colour and quite possibly the messiest party I have ever been to. But what a fun time we had! This was an experience like no other!

Winter is sneaking up on us and I am so not ready! Yes I do love boots and scarves and jackets, but truthfully I far prefer dresses and skirts and cocktails on the beach...
At least winter lends itself to red wine, fluffy blankets and cuddling up with a  good book...

Go Bananas



I absolutely love banana bread. The soft texture, the rich flavour - it's like cake except it feels healthier (not sure it really is). When I make this it becomes our breakfast standard, with a  little butter on top melting in, it sets the tone for  a great day ahead.

Banana Bread

Ingredients
  • 1/2 cup butter, at room temperature, plus more for pan
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mashed very ripe bananas (I used 2 big ones)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts or pecans

Method
  1. Preheat oven to 180C. Butter a loaf pan and set aside. 
  2. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
  3. In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts, and pour into prepared pan.
  4. Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
