Go Bananas

I absolutely love banana bread. The soft texture, the rich flavour - it's like cake except it feels healthier (not sure it really is). When I make this it becomes our breakfast standard, with a  little butter on top melting in, it sets the tone for  a great day ahead.

Banana Bread
(recipe taken from here )
  • 1/2 cup butter, at room temperature, plus more for pan
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mashed very ripe bananas (I used 2 big ones)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts or pecans

  1. Preheat oven to 180C. Butter a loaf pan and set aside.
  2. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
  3. In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts, and pour into prepared pan.
  4. Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

  5. Add dark chocolate chunks and bake them as little muffins. BEST!

  6. Oh my yum! But then it loses the 'healthy' feel, and I'll have to try harder to justify it as a breakfast!

  8. It's such an easy to do recipe and really worth it! I'd recommend trying it for sure!
